Serve this antioxidant-rich quinoa salad for a light lunch or as a side dish for an evening meal. Beets are high in phytonutrients called betalains, which support detoxification pathways. This is also what gives beets their dark purplish-red color. Betalains are destroyed by heat so it is best to eat them raw or very lightly steamed if your goal is to consume high amounts of these anti-cancer detoxification compounds! 

Ingredients

Quinoa

1½ cups red quinoa rinsed
2½ cups water
1 pinches sea salt

Salad

1 cups raw almonds roasted
2 medium beets peeled and grated
4 green onions thinly sliced
½ cups chopped cilantro
3 cups baby arugula
1 cups microgreens

Dressing

4 tablespoons extra virgin olive oil
6 tablespoons lime juice
½ teaspoons lime zest
1 inches fresh ginger finely grated
½ teaspoons sea salt
