This fresh quinoa salad is a wonderful way to enjoy late-summer vegetables, when sweet corn is at its peak and gardens are overflowing with kale and fresh herbs. Tender quinoa, finely chopped kale, sweet corn, and cilantro are tossed with a bright lime vinaigrette for a flavorful, plant-rich side dish.
