This gorgeous summer salad is heavy on the kale and light on the quinoa. It makes a lovely side dish or picnic dish to share. Serve quinoa salad for lunch with leftover salmon, chicken, or cooked chickpeas!

Ingredients

Quinoa

¾ cups quinoa
1¼ cups water
1 pinches sea salt

Salad

1 bunches kale chopped
1 cups blueberries
½ small red onions diced
4 ounces feta cheese crumbled
½ cups pumpkin seeds toasted

Dressing

4 tablespoons lemon juice
4 tablespoons extra virgin olive oil
½ teaspoons sea salt
