Make this creamy vegan mushroom-vegetable soup when you need a dose of anti-inflammatory nutrients! Mushrooms are a rich source of prebiotics that feed beneficial bacteria in the gut. Dietary intake of mushrooms also helps to raise secretory immunoglobulin A (SIgA) levels at the gut lining. Not only does SIgA help to neutralize pathogens, but it also helps to regulate the composition of the gut microbes. This helps to reduce gut inflammation and regulate the immune system—especially helpful after indulging in rich food over the holidays!

Ingredients
2 tablespoons extra virgin olive oil
1 small onions chopped
4 celery stalks chopped
8 ounces cremini mushrooms chopped (or white button mushooms)
1 pounds zucchini chopped
1 cups chopped broccoli
2 teaspoons dried thyme
1 teaspoons dried marjoram
1 teaspoons kelp granules
1½ teaspoons Herbamare
3 cups water (or stock)
½ cups chopped parsley

This is ok. Probably my least favorite of the detox soups, though.

This was good. I didn't have kelp so I used spirulina. I used Herbes de Provence & a tsp of kosher sea salt since I don't have the Herbamare. I also added a diced boiled egg to it to round out my lunch.

The mushrooms really give it a nice umami flavor. I thought it was better than most of the nasty broccoli & cheese or cream of broccoli soups I've eaten & made in the past.

I didn't measure/weigh exactly, so 3 cups of water didn't quite cover the vegetables. I added enough to cover the vegetables- probably another cup? It definitely didn't water it down.
