These vegan and gluten-free cranberry bars are tart and sweet, and full of citrus flavors. Serve them as a healthy holiday dessert or make a batch on the weekend so you can have a healthy snack to pack in your child's lunchbox for the week. 

Ingredients

Crust

2½ cups rolled oats
1 cups raw pecans
½ cups oat flour
2 teaspoons cinnamon
½ teaspoons ground cardamom
½ teaspoons sea salt
¼ teaspoons baking powder
6 tablespoons maple syrup
2 tablespoons orange juice
2 tablespoons avocado oil

Filling

4 cups fresh cranberries (or frozen)
6 tablespoons orange juice
2 teaspoons orange zest
1 tablespoons tapioca flour
4 tablespoons maple syrup

The whole family loved these! Not too sweet and the crust really holds up when cutting the bars. I might try with blueberries sometime to mix it up.

The oatmeal crust crumble is to die for. Add the cranberry filling. Scrumptious! I brought this to work for Valentines week and they all liked it!

These are amazing! I am a cranberry fanatic and love these. I agree with Sasafrass24: the perfect mix of tart and sweet. Next time (and there will be a next time) I will probably make the bottom crust a little thinner so that each bite is a little fruitier.
