These tasty nut-free, egg-free, and grain-free cookies are wonderful to make if you are on a restrictive diet such as an Elimination Diet or AIP Diet. You can drizzle with melted coconut butter if you would like a simple, nutritious icing. 


Dry Ingredients

1½ cups tigernut flour lightly packed (about 6.5 ounces)
1 cups tapioca flour
¾ teaspoons baking soda
¼ teaspoons fine sea salt
2 teaspoons cinnamon
½ teaspoons ground ginger

Wet Ingredients

cups organic palm shortening
cups maple syrup
2 tablespoons blackstrap molasses
2 teaspoons vanilla extract
½ teaspoons raw apple cider vinegar
