Use this vegan and paleo cut-out cookie recipe in lieu of traditional sugary sugar cookie recipes! This one is barely sweetened with maple syrup but tastes plenty sweet! Children and grandchildren will have fun cutting the dough out into holiday shapes. Use shredded coconut, chopped nuts, hemp seeds, chia seeds, or dried organic fruit to decorate.

Ingredients

Dry Ingredients

1½ cups blanched almond flour
1 cups tapioca flour
¾ teaspoons baking soda
¼ teaspoons fine sea salt

Wet Ingredients

cups organic palm shortening
cups maple syrup
2 teaspoons vanilla extract
½ teaspoons almond extract
½ teaspoons raw apple cider vinegar

Matcha Maple Icing

½ cups maple sugar
1 tablespoons tapioca flour
1 teaspoons matcha powder (optional)
4 teaspoons unsweetened almond milk
¼ teaspoons almond extract
