Serve this simple baked cod recipe with baked potatoes or roasted potatoes and steamed green beans for a simple family meal. If you are a garlic lover and you are not on a diet that restricts garlic, like the Low-FODMAP diet, try adding about 2 to 3 cloves of crushed garlic to the top of the fish before baking.

Ingredients
2 pounds wild cod fillets cut into 6 portions
1 lemons thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoons lemon juice
½ teaspoons paprika
½ teaspoons sea salt
2 teaspoons lemon zest

Garnish

2 tablespoons finely chopped fresh dill
2 tablespoons finely chopped parsley

Yum! Delicious. We used Canadian walleye.

This recipe turned out really well although I substituted Dover Sole for the Cod. After baking, I removed the fish and reduced the liquid to make a sauce.
