Serve this easy ground turkey and veggie meal over white basmati rice, long grain brown rice, or, for a low-carb option, serve over riced cauliflower. Serve with sliced fresh cucumbers and extra cilantro for an easy, nourishing meal. 

Ingredients
2 tablespoons extra virgin olive oil
1 pounds ground turkey
2 teaspoons finely grated fresh ginger
3 cloves garlic crushed
2 medium carrots grated
1 cups thinly sliced green cabbage
1 cups chopped snow peas
4 green onions chopped
½ cups chopped cilantro

Sauce

½ cups water (or chicken stock)
¼ cups coconut aminos
2 teaspoons coconut vinegar
2 teaspoons arrowroot powder
1 teaspoons black pepper

Quick to put together and very flavourful!! May try it with ground chicken or pork next time (turkey is a bit dry).

This was very popular with the kids and my husband. I was surprised that it had a somewhat sweet flavor. Maybe that was the coconut aminos. I was very pleased for how good this meal was for how quick it was to put together.

I made this with brown rice, and it is now one of our new favorite recipes. I left out the coconut vinegar since I didn't have any, and it wasn't missing anything.

This was a great meal over some warm brown rice! I love ginger and this dish centers the ginger nicely. I will definitely be making more of this

Moist and flavorful. My husband complimented me twice on this meal and asked me to make it again. I did not have green onions so just used diced yellow onion, which worked fine. Before serving, I topped with some chopped peanuts for a little added crunch.
