This salad is a nutritious combination of thinly sliced dark leafy greens, crunchy almonds, carrots, and chicken. You could use sliced almonds in place of the slivered. Try adding daikon radish, chopped cilantro, and sliced green onions too!

Asian Chicken Salad with a Soy-Free Dressing

Ingredients

Salad

4 cups thinly sliced savoy cabbage
2 cups thinly sliced kale
2 cups thinly sliced bok choy
3 cups shredded cooked chicken
2 large carrots julienned
1 cups slivered almonds lightly toasted

Dressing

4 tablespoons extra virgin olive oil
1 tablespoons toasted sesame oil
3 tablespoons coconut vinegar (or brown rice vinegar)
3 tablespoons coconut aminos
2 teaspoons raw honey
1 cloves garlic peeled
1 inches fresh ginger

Garnish

chopped cilantro
sesame seeds
