This soup is a great dish to prepare when you don’t have a lot of time; I use a food processor for all of the chopping, which cuts the preparation time in half. Serve this soup over cooked brown jasmine rice or white basmati rice. This soup also freezes well for later use.

Ingredients
1 small onions roughly chopped
5 cloves garlic peeled and crushed
2 tablespoons extra virgin olive oil
2 cups red lentils rinsed and drained
8 cups vegetable stock (or water)
5 cups baby spinach
1 handfuls parsley
½ cups freshly squeezed lemon juice (2 juiced lemons)
2 teaspoons Herbamare (or sea salt)

Wow, the lemon made this soup really bright and so yummy!! I did not get tired of it! I followed the recipe exactly and it was delicious. Fun too, to read others' reviews and see how they made interesting additions to it. I will make this often!

Best soup of 2025!! I used a bit less of the lemon juice and added 2 1/2 cups of shredded chicken as well as 1 tsp of parmesan cheese on top for each serving. Goes well with a loaf of Keto-Almond-Olive Oil Bread. This will go on my rotation list :) PS I realize red lentils need to be washed until the water runs clear, otherwise there will be "earthy" taste to it.

We enjoyed this soup. Different for a change compared to other lentil soups we eat regularly.

Oh my gosh! This got rave reviews from my entire family. We used brown lentils as that is all I had on hand. Definitely a keeper. I’m ditching my old stand by lentil soup recipe.
