This anti-inflammatory ginger-turmeric lentil soup is so easy to make and full of flavor! Use a high-quality homemade vegetable stock or chicken stock for best results. Serve soup with a scoop of brown rice for a nourishing, balanced meal. 

Ingredients
2 tablespoons extra virgin olive oil
1 medium onions chopped
1 tablespoons finely grated fresh ginger
2 cloves garlic crushed
1 teaspoons ground coriander
¾ teaspoons turmeric powder
½ teaspoons black pepper
1 teaspoons sea salt
¾ cups black beluga lentils sorted and rinsed
6 cups vegetable stock (or chicken stock)
4 cups chopped kale
½ cups cilantro chopped
2 tablespoons lemon juice
