Baharat is a middle Eastern spice blend that literally means “spices” in Arabic. You can create your own blend of spices or buy a pre-made blend. I like to use the Baharat Seasoning from Simply Organic (this is what is pictured here). It is a blend of ground cumin, coriander, black pepper, cinnamon, cardamom, cloves, allspice, rose petals, ginger, and nutmeg. This Middle Eastern chicken and rice dish is easy enough to make for a family weeknight dinner, yet elegant enough to be served as a main dish for a special occasion. Serve with a cucumber and tomato salad or winter fennel salad for a balanced meal. 

Ingredients
1¾ pounds boneless chicken breasts cut into large pieces
2 tablespoons baharat seasoning
1½ teaspoons sea salt
1 tablespoons lemon juice
4 tablespoons extra virgin olive oil divided
1 medium red onions chopped
1½ cups white basmati rice rinsed and drained
3 cups chicken stock
½ cups dried apricots chopped
2 cinnamon sticks
2 bay leaves
¼ cups finely chopped parsley
