These keto-friendly meatballs can be made with ground chicken or beef instead of turkey if desired. They're perfect if you are on a low-carb diet, or if you have a few growing and hungry teenagers to feed! This recipe comes together quickly and is easy enough to make on a busy weeknight. Serve alongside a simple green salad with an herbal vinaigrette or red wine vinaigrette. 

Ingredients

Meatballs

1 pounds ground turkey
½ cups blanched almond flour
½ cups shredded parmesan cheese
1 teaspoons Italian seasoning
½ teaspoons sea salt
¼ teaspoons black pepper
2 tablespoons extra virgin olive oil (for cooking)

Sauce

5 cloves garlic
2 cups heavy cream
½ cups shredded parmesan cheese
1 bunches kale chopped
1 handfuls parsley finely chopped

Scrumptious meal! I used fresh kale and parsley from the garden and the kale cooked this way is delish! Since this meatball recipe is the same as the one with tomato sauce, I knew I’d want a little more seasoning so, I used ¾ teaspoon salt, a heaping ¼ teaspoon pepper, and 1-½ teaspoons of Italian seasoning. This addition satisfied my taste buds! With all the heavy cream and parmesan, I found this very filling and only needed two meatballs and sauce to fill me up. My husband had three and was full. Highly recommend because this reheats well, too!

So delicious! The only change I made was to use gluten-free flour instead of almond flour.
