If you need to add a variety of antioxidant-rich and anti-inflammatory leafy greens to your diet, try this recipe! Radicchio and kale are both very bitter and will help stimulate proper digestive functions, especially when the salad is served at the beginning of a meal. The flavors of this salad are well balanced in order for the bitter vegetables to blend in and not overpower the rest of the salad. Serve this recipe with an Italian-inspired main dish such as this Orzo and Beef Stew or this vegetarian Creamy Pumpkin Alfredo Sauce tossed with your favorite variety of cooked noodles.

Salad

1 heads romaine lettuce chopped
½ bunches lacinato kale chopped
1 small heads radicchio chopped
1 small yellow bell peppers sliced
½ small red onions thinly sliced
½ cups kalamata olives (pitted)
1 cups artichoke hearts halved
½ cups chopped parsley

Dressing

6 tablespoons extra virgin olive oil
4 tablespoons red wine vinegar
1 teaspoons dried oregano
1 teaspoons dijon mustard
½ teaspoons black pepper
½ teaspoons sea salt
