These nutrient-dense carrot oatmeal cookies can be used for a quick breakfast on the go or a healthy after school snack for your children. Raisins, currants, chocolate chips, or chopped nuts can be added to the dough if desired!

Ingredients

Wet Ingredients

¼ cups finely ground golden flaxseeds
¼ cups warm water
¾ cups creamy roasted almond butter
½ cups unsweetened applesauce
¼ cups maple syrup
¼ cups avocado oil
1 cups shredded carrots

Dry Ingredients

1½ cups rolled oats
¾ cups oat flour
¾ teaspoons baking soda
¾ teaspoons fine sea salt
2 teaspoons cinnamon
¼ teaspoons ground nutmeg

While these are tasty when they’re fresh from the oven, they turn super mushy even just stored overnight. Better with raisins

I totally got ahead of myself and assumed that we had carrots on hand, doh! Subbed for shredded zucchini (water squeezed out) and also substituted almond flour for the oat flour. Added raisins and chopped walnuts, and they're a hit with the family. Thank you!

Another fantastic recipe! Doubled the recipe, but ran out of almond butter, so I added some macadamia nut butter. Made one batch w/o anything added; the second batch has sour cherries, toasted walnuts and toasted pumpkin seeds. Both were yummy! I'm going to freeze some to have on hand for breakfast, snacks, etc... These are awesome, thanks so much!

I made these using sunflower butter since that's what I had on hand, and about 1/4 C finely chopped pecans. Fantastic taste and texture! It's the first time I've tried a recipe using flax seed instead of egg, and I'm glad to experience that it does result in something yummy. I'm going to have to double or even triple the batches, though, or they'll disappear way too fast.
