Beef stew usually takes hours to cook over a low heat in order to tenderize the meat. With an Instant Pot, though, you can have beef stew in less than an hour! Serve this hearty gluten-free beef stew with a cabbage slaw for a nourishing weeknight meal.

Ingredients
2 pounds beef stew meat
2 tablespoons sweet rice flour
1½ teaspoons sea salt
1 teaspoons dried thyme
½ teaspoons black pepper
2 tablespoons extra virgin olive oil
1 medium onions chopped
2 cups water (or beef broth)
3 tablespoons tomato paste
2 bay leaves
1½ pounds baby red potatoes halved
4 medium carrots chopped
½ cups chopped parsley
2 tablespoons coconut aminos (optional)

This was great! I had to cook the potatoes and carrots much longer, however, so next time I will be sure to chop them smaller (1/4" rounds for the carrots and 1" chunks for potatoes). I used Bare Bones instant bone broth and it added extra flavor that was great too!

I made the 2.5 serving size in my 6 quart instant pot and it was great! Whole family loved it. The meat was tender and vegetables were cooked perfectly. This will be a staple going forward.

Doesn't work to double this recipe with the instant pot, even with the largest, 8-quart size.
