This easy anti-inflammatory Elimination Diet meal is great for quick weeknight dinners. Serve with a simple slaw or salad for a balanced meal.

3 tablespoons extra virgin olive oil (divided)
1 medium red onions chopped
1½ pounds boneless chicken breasts cut into large pieces
1½ teaspoons turmeric powder
1 teaspoons ground coriander
½ teaspoons ground cumin
1½ teaspoons sea salt
1 inches fresh ginger finely grated
3 large carrots sliced
1½ cups white basmati rice rinsed and drained
3 cups water (or chicken stock)
2 bay leaves
1½ cups frozen peas
½ cups chopped cilantro
