These gluten-free and vegan apple pie bars make a great nutritious after-school snack for your children or a delicious kid-friendly holiday dessert! Walnuts and oats are rich in antioxidants, and oats are an excellent source of beta-glucans (a soluble fiber that feeds beneficial bacteria in the gut)! It is important to use a soft baking apple in these bars so they cook properly during the baking time!

Ingredients

Crust

1 cups raw walnuts
3 cups rolled oats (divided)
¼ cups brown rice flour
¼ cups tapioca flour
1 teaspoons cinnamon
½ teaspoons sea salt
2 tablespoons finely ground golden flaxseeds
3 tablespoons warm water
4 tablespoons maple syrup
6 tablespoons coconut oil

Filling

3 medium apples peeled and finely diced
2 tablespoons maple syrup
2 tablespoons coconut sugar
2 tablespoons tapioca flour
1 teaspoons cinnamon

After reading the reviews below, I put only 1/4 C of oats in the topping, and pressed it down just like I had pressed down the base layer. I also added a tablespoon of coconut butter - this resulted in bars that hold together vs being too crumbly. These were a hit at my house - especially right out of the oven with a dollop of vanilla yogurt on top! Great flavor! I used Granny Smith apples, and left it in longer at a lower temperature so they cooked through and became soft without burning the crust.

Yes. I love the flavor, but better served as an apple crumble with a spoon.

These tasted great! The crust worked well for me by par baking it for the suggested amount of time (12 min). But the topping turned out WAY to crumbly. Next time, I would reduce the amount of extra oats that goes into the topping by half (or none at all and just crumble the left over crust on top).

Tastes great but maybe par bake the crust first. My crust was soggy & it was more like a crumble.

I really liked these. One thing I noticed was the topping was very crumbly and did not adhere well for me. When eaten it easily falls apart.
