Curried Root Vegetables

Ali Segersten Dec 07, 2010

Our pantry and refrigerator are brimming with root vegetables this time of year. What better way to enjoy them than with a savory curry sauce? This recipe is vegan though it could be modified to add chicken or beef if desired. Another option would be to add a few cups of cooked garbanzo beans. Mmmmm, yum!

To continue on with the spirit of the giving season I am giving away another wonderful cookbook today. Stephanie O' Dea has written a bestselling slow cooker book entitled, Make it Fast, Cook it Slow. It is the perfect book if you are looking to eat healthier, are on a gluten-free diet (yes, all recipes are gluten-free), and don't have much time to prepare home-cooked meals. I have one signed copy for one lucky winner! Just leave a comment below to enter.

If you would like to preview some of her recipes you can go to her very popular blog, A Year Of Slow Cooking, which began in 2008 as a resolution to cook everyday that year using her slow cooker! Stephanie also has a new cookbook being released later this month, More Make it Fast, Cook it Slow: 200 Brand-New, Budget-Freindly, Slow-Cooker Recipes. The following curried vegetable recipe is one of mine, though Stephanie has a number of fabulous-looking curry recipes in her book.

I love my slow cooker especially for comfort foods at this time of the year. Stephanie's book would be a nice complement to my crockpot to help plan weekly meals.

I am so loving your work! I'm also a mum to twin boys now aged 5yrs and I love reading about your family life and all those scrummy recipes. Tried to buy your book here in the UK but haven't been successful yet. My boys used to love eating vegetables, but now I find it hard no matter how creative I am, have you got any ideas Ali? Thanx, Sara x

I've enjoyed starting a crockpot of steel-cut oats the night before and waking to an effortless breakfast for my family. I'd love some new crockpot ideas!

Ooo yay! I love slow cooking and it is so easy

I appreciate all your fabulous recipes that are helping me become comfortable with gluten intolerance and to be able to provide meals that my family like as well. Thanks for the opportunity to enter to receive the slow cooker cookbook!

I made this tonight using turnips instead of parsnips and added the chickpeas. Delicious!

Mmmm, this recipe made my mought water while I was reading it! Sounds amazing. I am very interested in this book as I have been gluten free and grain free for two years now AND I have a slow cooker. I have not used my slow cooker much since I do not have any recipes for it, but I am really looking forward to changing that. Thank you for this contest! ;)

I'd love to learn some new ways to use my slow cooker. And I will be trying this curry soon, maybe with some chicken added. Looks great!

As a mom of four kids under the age of 6--the slow cooker is my best friend. I do hope that I win!!! This cookbook would be such a blessing :-)

Yummmmm! Ali, your recipes speak to my soul/belly.

That book sounds so good. I have a 4 month old and am doing my best to feed our family as healthily as I can.

I'd love to win a book! ~Victoria Kieburtz

I love my slow cooker - I use it at least twice a week since I work long hours and still like to serve a healthy dinner for the family dinner. Kristen

Thank you for offering the contest. I love cooking with my crockpot.

This sounds like a neat cookbook. Thanks for the drawing.

sounds delicious - I love seasonal cooking. Thank you for the giveaway offer; I follow her blog too.

I just discovered your site last week and made two recipes for dinner yesterday. My husband and I felt nourished and happy. Thank you so much for sharing your talents in the healthy and creative cooking/eating arena! We are big fans already.

This looks delicious!I love winter veggies, and a curry is so warming when it's cold out. I will try this.

I would like to use my slow cooker more, but I'm always disappointed in the recipes I tried already. I would love to win this cookbook and see if it will make me use it more! It would be so convenient, especially with a toddler and a new baby requesting my arms almost non-stop! :0)

I'm definitely going to make this one! I think I'll try softening the spuds in the pressure cooker first.

Fast and Slow- perfect for a working pregnant mom trying to eat more veggies!

Ali,

I just finished a bowl of homemade soup with many of the same ingredients you list in this curried root veggie dish. No curry this time, but I've saved your recipe and will make your version tomorrow. My CSA share comes on Wednesdays and it's been nothing but root vegetables lately (not that I'm complaining). I love this kind of meal, especially with the temperatures dropping. I got a big kick out of your sledding photos, by the way. Beautiful family you have!

Melissa

Mmmmm I think I'm going to try this recipe tonight. And as for your recipes being too learge; I sometime double mine for a family of four. I have two little girls, but that way I get a break on cooking or freeze leftovers for a rainy day;if I get sick or need a day off. I would love to be the winning recipient of this book as I have often thought of how good some of your recipes would be on a crockpot but I don't have a good understanding of how the time would translate from the stove to the crock. Thanks !!! JS

This recipe book sounds wonderful. Thank you for sponsoring this giveaway!

I am constantly using my slow cooker so that dinner is ready when I get home from work. I would LOVE to win this book!!

i love that this book is a slow cooking book first, and just happens to be gluten free second. looks delicious!

The cookbook sounds amazing! I am always looking for quick healthy meal ideas! I love all your recipes - you inspire me!

It's funny you should post a curried vegetable crock pot recipe today. I just resurrected our crock pot from the bottom pantry shelf and put together a yummy curried lentil soup with root vegetables well represented in the ingredients.

Your gluten-free, and sometimes egg-free and casein-free recipes are always eagerly anticipated, and the links you so generously provide add a wonderful diversity to the gluten-free repertoire. My copy of your cookbook is spattered, dog-eared and stuffed with other online gluten free recipes - - - and it's only six months old.

Thanks for the giveaway! Sonya B

I've been trying to go gluten-free and to use my crock pot more lately. It's so hard to find good recipes for either!

that recipe looks fabulous! and that cookbook sounds pretty good as well.

I love the warmth of curried anything, especially in winter. Can not wait to try this Ali! And need to get back to that slow cooker too-so nice to have a warm dinner, prepared with all the morning's energy :)

I love the crockpot lady's blog and could def use some more slow cooker inspiration.

Hi Ali,
This recipe looks fabulous and is just what I'm in the mood for this time of year! Thanks for sharing!

A beautiful recipe as always. I spoke with a lovely man in the grocery store and he educated me on bitter melon. I bought one and think this is the perfect recipe to try it with! And please enter me into your giveaway! Karen

Looks delicious!

You know I am always in for a cookbook! I have a terrible low-carb crockpot book, it would be great to have an improvement in the kitchen.
