This coconut curry chicken is so easy to make—just prep and walk away! Come back a few hours later to chicken so tender it falls off the bone. Serve with steamed broccoli and basmati rice, or, for a low-carb option, serve with riced cauliflower.

Ingredients
2 pounds bone-in chicken breasts
2 pounds bone-in chicken legs
1 large lemons juiced
2 teaspoons sea salt
3 tablespoons extra virgin olive oil
1 large onions cut into crescent moons
2 tablespoons curry powder
1 cans coconut milk
½ cups water
4 tablespoons minced cilantro
