Curried Root Vegetables

Ali Segersten Dec 07, 2010

Our pantry and refrigerator are brimming with root vegetables this time of year. What better way to enjoy them than with a savory curry sauce? This recipe is vegan though it could be modified to add chicken or beef if desired. Another option would be to add a few cups of cooked garbanzo beans. Mmmmm, yum!

To continue on with the spirit of the giving season I am giving away another wonderful cookbook today. Stephanie O' Dea has written a bestselling slow cooker book entitled, Make it Fast, Cook it Slow. It is the perfect book if you are looking to eat healthier, are on a gluten-free diet (yes, all recipes are gluten-free), and don't have much time to prepare home-cooked meals. I have one signed copy for one lucky winner! Just leave a comment below to enter.

If you would like to preview some of her recipes you can go to her very popular blog, A Year Of Slow Cooking, which began in 2008 as a resolution to cook everyday that year using her slow cooker! Stephanie also has a new cookbook being released later this month, More Make it Fast, Cook it Slow: 200 Brand-New, Budget-Freindly, Slow-Cooker Recipes. The following curried vegetable recipe is one of mine, though Stephanie has a number of fabulous-looking curry recipes in her book.

Tried it. Liked it. Will make it again. I added a chicken breast since my husband has trouble with meatless meals :)

Ooooo, I was SO excited to find this recipe. It was a hit at our house. AJ

I always keep coming back for this recipe and your creamy zucchini soup recipe! So delicious!

as a mom of 5 young kids and a full time physician...I can definitely use some ideas for slow cooking whole foods...we are on a gluten free, casein free diet...well I am and am trying to convince the hubby..LOVE your site...just had a friend send it to me...thanks!

I am in Phase I of the Elimination Diet and already feeling better. I've been telling everyone about your amazing first cookbook! This is the perfect time of year for me to be doing this, since I have a seasonal business that leaves me free in the winter. I worry about summer and think your new slow cooker book would be a great help. Hope I win!

Love your blog... I'm trying to find blogs that will support my daughter with her new diet of wheat and sugar free and we are bother veg as well.
This book looks like it could be most helpful for a busy family of five who is also very health conscious.

Hi! Sorry I never received an email from you so wasn't aware I had won. I just emailed you and will send you another one with my shipping info. Thank you!

That looks like a great book!

I made this today for dinner and served it on it's own with dried coconut on top - a total winner for everyone!! I substituted the potatoes for cauliflower and one of the boys who doesn't 'do' vegetables easily declared the whole lot yummy, even the cauliflower! Thank you x

Great recipe! Can't wait to try it! I'd love to win the book!

I made the curried root veg dish for dinner tonight. It was so good! Everyone enjoyed it from the baby to the adults.
Thanks for the opportunity to win a new cookbook to try!

Thanks for dinner tomorrow! Love your cookbook and it has helped my family through this entire year with few complaints.

Thanks for tomorrow's dinner!

I would just love this book! Sounds perfect for our house and needing more balance with cooking! Love the recipe.

Slow cooking is wonderful! Please enter me!

I've recently purchased The Wholelife Nutirition cookbook and made some recipes already. The book is great and I would like to get new ideas from the Make it Fast, Cook it Slow cookbook too.

Love your recipes. Having a cookbook would just rock! Thank you for the time and commitment you put into your blog. PM

My niece, a young mom, has just discovered she is gluten intolerant, and with another little one on the way, needs some ideas for time saving GF cooking. This cookbook looks promising. We both need to eat GF, but also dairy free. Does this book have many recipes that would also meet this added need? If not, can you recommend any resources? My niece is really struggling with the time element as she tries to change habits of cooking for her young family. Thanks so much! I love your web site.

Yes, I really need to get to using my slow cooker. And that root veggie recipe looks delicious and perfect for this cold weather!

I never thought slow cooking and healthy could go together! Looking forward to it.

please please please let this be my lucky day. I work at the Moscow Food Co-op and am always sending customers to check out your website!

Thanks for offering a give-away! We are expecting our sixth child, just received a brand new crockpot two days ago, I've been CRAVING curries and all I eat these days are veggies (have to follow a gestational diabetic diet). Can't wait to make your curried veg recipe! Best blog EVER.

Just found your site and shared this recipe on Facebook. Awesome!

Yummy curry recipe! I'm so glad I found your blog!

I love using my crockpot and would love this cook book. Catherine B

After returning from traveling in a car on I5 for six days with three kids and having to try and find healthy food on the way I went straight to your cookbook and made your butternut squash soup. It was the medicine my family needed to start to feel healthy again. We love your cookbook. As a part time working mum, I really am excited about a slow cooker cook book out there that focuses on health and flavor, even if I don't win it I'm going to try and buy it!

Pick me! Pick me!

just shared on facebook, cant wait to try this

yay curry!

Ooh, I would love to win this cookbook! Thanks for the giveaway! KR

I have thrown away all my old cookbooks that lead me to the unhealthy way to feed my body. The only one I use is is yours Ali. Healthy crock pot meals are the best!

Oh, fantastic! I've been looking for a reason to pull out the ole crockpot! Thank you!

Sounds great! I'm eating your wasabi cabbage salad right this minute, so yummy! You guys have the best recipes, I really appreciate this site and your book. So helpful!!

I just got a slow cooker and am not exactly sure what to do with it... I have a feeling this would help :)

Love slow cooking, simplifies my life in soooo many ways. Look forward to reading all the recipes

Thanks for the inspiration and cookbook offer-Happy Holidays, Teresa

I love my crockpot and would happily use it daily. Various food allergies in our family make cooking a bit of a challenge so I'm always on the look out for great recipes that will avoid the use of the epi-pen! Thanks for an inspiring site.

Cranberry Orange Upside Down Cake (grain-free)

I adore cranberries as you probably already know if you've been reading my blog. This healthy cranberry orange upside down cake recipe isn't very rich or sweet. In fact I sweeten it with just a few tablespoons of maple syrup. It's plenty sweet for my family though.
