This morning I slept in until 10am! Now that is something to be grateful for. The babies woke up quite a bit last night leaving me quite sleep deprived early this morning. Tom took all the kids downstairs, and, with the shades wide open and the sun shining in, I slept for an extra 2 1/2 hours!

This dairy-free and refined sugar-free vegan buttercream frosting is not overly sweet and perfect for frosting a layered cake or a dozen cupcakes! To make it pink, add in one tablespoon of organic beet juice powder. I also like to add 5 to 6 drops of lemon essential oil to brighten the flavors.
I created this recipe very late the night before one Thanksgiving. It was perfect for our large gathering of 20 plus gluten-free friends. They all enjoyed it and I am sure you will too. You can vary the ingredients in the filling. Try replacing the cranberries with dried cherries and the almonds with hazelnuts or cashews. The filling is dark and rich and not very sweet. The other night Tom began preparing dinner by making his favorite Quinoa Black Bean Salad. I usually like to serve it along side some steamed winter squash for a light meal. The past few years I have made a delicious, savory, gluten-free wild rice stuffing for the big Thanksgiving Day turkey. We always use half of it to stuff the turkey, while the other half gets baked in a casserole dish. I have not had a recipe for this until today; I usually just toss it all together until it tastes just right. While preparing this at our holiday cooking class last week, I had a number of people ask me for exact measurements, which I just could not give. So today, I dutifully measured every ingredient before I put them into the skillet. The end result was perfection.

Although life seems to have eased up a bit now that our twin babies will be 15 months old tomorrow, the pace has begun to ramp up. Most days I feel like I am herding cats! For example, the other day I was out for a morning walk with the boys while the girls were in school. The boys really enjoy walking for part of it and if were up to Sam, he would walk for miles without stopping. As we neared the duck pond on a wooded trail near our house the boys began to merge onto the trail that leads down to it. I stopped the baby jogger and rounded them up like two footballs under each arm.

After a temporary break of much needed spring-like rain, summer is back! We spent the day at the beach. The kids waded in the ocean and found purple and orange starfish in the tide pools. The boys were happy to dig in the sand for a few hours. And me? Well I got to lounge in the sun and talk with a friend while I ate this refreshing summer salad.
Here I used English cucumbers and basil from the Farmer's Market, and local heirloom tomatoes from our food co-op. Add shaved parmesan cheese or fresh mozzarella cheese if you tolerate dairy products!

Something spicy, green, and with noodles was brewing in my mind. A green curry sauce, over noodles, with tempeh, broccoli, spinach and zucchini. Hmm, and how about roasted cashews too? Every now and then I make a simple Thai Green Curry Sauce. Yesterday evening I took note of the ingredient amounts to be able to share it with you.

It's spring and the salad greens are luscious and sweet. Our garden is filled with as many varieties of greens as we could fit. Spicy and mild salad mixes, arugula, spinach, romaine lettuce, butterhead lettuce, bok choy, kale, collards, cilantro, and more are growing out our back door. We have a hundred or so volunteer sunflowers that I have not thinned out yet. Some of them will make great shade later on in the summer for the tender, cool weather-loving greens.
