Crunchy Romaine Salad with Italian Herb Dressing

Use this salad as a base and add your favorite vegetables, leftover cooked chicken, cooked fish, or cooked beans! The apple cider vinaigrette is perfect to make when fresh herbs are in season.

Ingredients

Salad

1 heads romaine lettuce rinsed and chopped
5 green onions sliced into thin rounds
5 small radishes sliced
1 medium cucumbers diced
1 large carrots grated
1 large avocados sliced
½ cups raw sunflower seeds toasted (or pumpkin seeds)

Dressing

½ cups extra virgin olive oil
¼ cups raw apple cider vinegar
3 teaspoons raw honey
2 cloves garlic peeled (optional)
½ teaspoons sea salt
½ teaspoons freshly ground black pepper
½ cups fresh basil
½ cups parsley
1 tablespoons fresh oregano
