Grain-Free Coffee Cake
This scrumptious gluten-free, grain-free, sugar-free, and dairy-free coffee cake recipe comes from Kelly Brozyna's new cookbook, Grain-Free Baked Goods and Desserts! It is one of those recipes that is nutritious enough to stand alone at breakfast time, though I prefer to serve it with a green smoothie! It is filled with cooked white beans, coconut flour, eggs, and a little honey and stevia! My children love this recipe and as the neighbor girl who was visiting today said, "I can't believe this is gluten-free, it is so good!"

Last year I reviewed Kelly's first book, The Spunky Coconut Cookbook. A year later, I am back with more praise for her second book! I love how nutritious and kid-friendly all of Kelly's recipes are. As the title describes, this book is grain-free, but also completely casein-free, soy-free, and refined sugar-free. Many of the recipes are also egg-free. If you are vegan or are sensitive to eating eggs then you will still find plenty of recipes in this book to suit your needs. This book also works well for diabetics and others with blood sugar metabolism issues.
Both of Kelly's books are filled with beautiful, color photos. My children like to sit down with the new book and page through it picking out all of the recipes they want me to make! They also think it's pretty neat that I wrote the foreword for her book. Below is one of our favorite recipes from her book, enjoy!

Most coffee cakes are not nutritious, but this one looks like one I would try.
This cake looks wonderful! We have been trying to go grain free, and I just got some coconut flour not too long ago. Looks like I need to get Kelly's books. I am wondering if I can substitute coconut palm sugar for the stevia. I have found that stevia is now giving me a headache every time I eat it. I don't like headaches. If you have any idea, please let me know.

I really like the sweetener and fat profile of this recipe. I did (many, many years ago) make a pinto bean cake that was definitely a flop. White beans sound more promising.

Ali, that coffee cake is one of our favorites in our house. The only thing I change up from her recipe is that I use almond flour instead of coconut since my son tested to be slightly sensitive to coconut. I love how all of those eggs make it so spongy (I always use my neighbors fresh eggs from her Mom's chickens). What a healthy morning treat! It was what we just had onThanksgiving morning as well. What an awesome giveaway!

I am so excited to make this! I have vowed this Christmas season to make wonderful HEALTHY baked goods and treats instead of the usual suger. gluten filled ones. It makes me feel so great knowing that I will be giving so much more then just another baked good.

I made a marbled cake for my daughter's birthday with black beans in the chocolate part and white beans in the vanilla part. It was great - so moist! I bet this coffee cake will be the same and I look forward to trying it. Thanks!

This recipe looks great! I'm wondering how I can sub for 6 eggs though (my son is allergic to eggs) and the walnuts (I'm allergic to nuts). Is there a way to eat grain-free with those allergies?

I have been waiting for this cookbook to come out with ants in my pants! After switching both my daughter and myself to a gluten free diet about two years ago we felt great for about 5-6 months...and then the more familiar I became with the flours and the tricks to make eating gluten-free (and dairy and soy free) delightful, the more I noticed our symptoms were creeping up again. I've found that we just have a tough time breaking down our carbs - and sugar has proven to be a detriment to us even in small amounts; The immune system just flat out revolts. I'm hoping to heal our guts through some suggestive diets and then, when we are ready, look out grain-free cupcakes!!

Okay, I must get Kelly's new book! It's been on my list, but I just haven't done it yet. You've inspired me with this healthy, grain-free breakfast "treat." This is my kind of coffee cake. I love the idea that it's not laden with sugar and other not-so-healthy stuff.
