Massaman, pronounced [mát.sā.màn], is a relatively mild curry dish blending Persian and Thai cuisine. The name came from “Mussulman” or a form of the word Muslim. Use my curry recipe below or create your own variations using whatever vegetables and meat you have on hand. You'll need to first make a batch of Thai Massaman Curry Paste for this recipe, or use a good quality store bought paste. 

Ingredients

Curry Base

2 tablespoons avocado oil
8 tablespoons Massaman Curry Paste
2 cans coconut milk
1 cups water
2 tablespoons fish sauce
3 cinnamon sticks
2 whole star anise
2 dried Thai chili pepper
3 kaffir lime leaves

Chicken & Vegetables

1 medium onions chopped
1½ pounds boneless chicken thighs chopped (or chicken breasts)
4 large carrots sliced into thick rounds
5 medium red potatoes chopped
½ pounds green beans trimmed and cut in half
1 large red bell peppers chopped
1 bunches cilantro chopped
