This delicious Thai-style sauce can be made in about 20 minutes from start to finish. Use this sauce to create a simple green curry! Sauté a variety of veggies (add meat or tofu if desired) over medium-high heat for a few minutes (starting with the veggies that take the longest to cook) and then add the veggies to the sauce and simmer for just a few minutes until tender. Serve with white or brown rice. Add leftover roasted chicken or poached chicken breasts for added protein.

Fresh Thai Green Curry Sauce

2 bunches cilantro
2 shallots
4 cloves garlic
2 thai chili peppers (or jalapeño peppers)
1 tablespoons fresh ginger
½ teaspoons lime zest
2 teaspoons coconut sugar
1 tablespoons fish sauce (or 1 teaspoon sea salt)
1 cans coconut milk
½ cups water
