Ingredients

Tofu

1 packages extra firm tofu cubed
3 tablespoons wheat-free tamari

Stir-fry

2 tablespoons coconut oil or avocado oil
1 medium shallots minced
3 cloves garlic minced
2 inches fresh ginger minced
3 fresh hot red peppers thinly sliced into rounds (optional)
1 large heads broccoli cut into small florets
2 heads baby bok choy chopped stalks and leaves separated
2 teaspoons wheat-free tamari

Peanut Sauce

½ cups creamy peanut butter
¼ cups filtered water
2 tablespoons sweet chili sauce
1 tablespoons wheat-free tamari
½ teaspoons brown rice vinegar
2 teaspoons toasted sesame oil
1 tablespoons minced garlic
1 tablespoons minced fresh ginger
¾ teaspoons crushed red pepper flakes (optional)
