This stir-fry, rich in cruciferous vegetables, offers significant cancer protection. The anti-cancer effects of these vegetables comes from the phytochemicals like sulforaphane and indoles. These chemicals not only suppress tumor growth, but also cancer cell metastasis. You can add cubed marinated organic chicken or tofu to this stir-fry if desired. Serve with brown basmati rice.

Ingredients
1 tablespoons coconut oil (or avocado oil)
1 medium onions chopped large
2 carrots peeled and cut into ¼-inch thick diagonals
3 cloves garlic crushed
2 teaspoons minced fresh ginger
1 heads broccoli cut into florets
2 cups chopped bok choy
4 cups chopped savoy cabbage
cups water
½ tablespoons kudzu
2 tablespoons wheat-free tamari (or coconut aminos)
1 tablespoons brown rice vinegar (or coconut vinegar)
