Serve this flavorful Mediterranean-inspired tofu stir-fry over white rice or with these Rosemary Flatbreads. If you are following a low-carb or keto diet, serve the stir-fry over Cabbage Noodles or over Steamed Kale. It is best to use super firm tofu if you can find it! 

Ingredients

Stir-Fry

16 ounces extra firm tofu cubed
1 medium red bell peppers thinly sliced
1 medium zucchini cut into half moons
4 green onions sliced
1 tablespoons avocado oil (or olive oil)

Marinade

¼ cups balsamic vinegar
3 tablespoons wheat-free tamari
1 tablespoons extra virgin olive oil
2 teaspoons finely chopped fresh rosemary

Garnish

1 handfuls fresh basil
