For those of you on the elimination diet, this drink is great during the two day green smoothie cleanse. Yes, I know, it's not green, but it still works, especially if you are feeling bored with the color green and need a change of pace. It does actually have a little spinach in it so we could technically call it a green smoothie!

Romano beans are similar to the standard green bean, but they are flat and grow in Mediterranean-type climates. I bought a bag from a local organic farmer at the Saturday Market. I was thrilled to see that this particular stand was using Bio Bags to sell their produce! I sure wish all co-ops and health food stores would switch to this biodegradable and compostable form of plastic!

This past Thursday I had a cooking class. A dessert class to be exact. There is a lot to prepare the day of a cooking class. Not only do I need to make sure I have all of my recipes printed and ready to go, I also need to pack up most of my kitchen to go with me. Then there is the shopping, class, and clean-up. But when there are children involved, and in my case, four of them, I also need to prepare dinner and make sure the house is in order for the babysitter.

Here is a yummy recipe I created a few weeks ago for gluten-free fish sticks using halibut. This is one of my super-quick-and-easy meals! I use shredded coconut for the breading and a unique slurry to dip them in....you'll see in my recipe below. I also like to serve these with a Thai Peanut Dipping Sauce (recipe to follow).
I find these fish sticks very filling and only eat about 2 or 3 before I am done. I like to serve them with plenty of fresh, organic greens. I usually just drizzle some of the peanut dipping sauce over the greens for a dressing.

This sauce is so easy to make. I use a 7-ounce glass jar of Bionaturae organic tomato paste to start. Then I mix in olive oil, honey, salt, and herbs. That's it! Pictured here is a triple batch. We are visiting with family right now so large batches are the norm these days.

Luckily my children like cabbage too, though my girls have decided they like their cabbage plain, no dressing please. I gave this salad to my twin boys who turned two yesterday and one of them loved it while the other one spit it out.

While we were in Hawaii we lived off of papayas. Papayas with lime for breakfast, papayas in green smoothies, and fresh papaya salsa. We packed rice, quinoa, and pink beans with us. I found it very easy to make a large pot of pink beans, cooked with cumin and onions, to have on hand for quick lunches and dinners.
In preparing for Easter, I decided to make my own sugar-free candy (healthy treats) this year. The kids usually get a variety of raw nuts and dried fruits hiding inside those little plastic Easter eggs. That Easter bunny is just too darn healthy! Sometimes he leaves jelly beans and a lollipop too. Since chocolate can strongly affect some children, I'd recommend wrapping only one of these chocolate clusters up in a small square of parchment paper, tied up with a pretty ribbon, for your child. I have no doubt that the adults in the house will munch the rest.
