This dairy-free and vegan mashed potato recipe is just as creamy and flavorful as one made with milk and butter. Although you might think that using six cloves of garlic could be overpowering, the garlic flavor is actually quite subtle. Draining the cooked potatoes and reserving the liquid to help mash the potatoes is a great alternative to using any type of milk. Served mashed potatoes with a Whole Roasted Chicken, Gluten-Free Gravy, and Steamed Green Beans for a balanced, nourishing meal. 

6 medium yukon gold potatoes cut into chunks
6 cloves garlic peeled
½ cups reserved potato cooking liquid
6 tablespoons extra virgin olive oil
½ teaspoons Herbamare
