These gluten-free muffins are perfect hot out of the oven with a cup of hot apple cider. They will also stay moist for days! If apples are out of season, you can replace them with diced peaches or pears, frozen blueberries, and add different spices such as cardamom and nutmeg.

Ingredients

Dry Ingredients

1½ cups brown rice flour
1½ cups blanched almond flour (gently packed)
1 tablespoons psyllium husk powder
2 teaspoons cinnamon
1 tablespoons baking powder
½ teaspoons baking soda
½ teaspoons sea salt

Wet Ingredients

1 cups non-dairy milk
¾ cups unsweetened applesauce
½ cups coconut sugar
¼ cups extra virgin olive oil (or melted coconut oil)

Other Ingredients

1 granny smith apples cored and finely diced
