This salad is made of ingredients you probably already have at home, making it a perfect salad to throw together any night of the week. Make a big batch of dressing to store in your fridge throughout the week to make this salad truly effortless to make. If you do not have all of the suggested ingredients on hand, use what you do have! Cucumber, tomato, green onions, or thinly sliced cabbage would all be excellent additions. Use the dressing suggested here, or another recipe such as Greek Vinaigrette, Creamy Lemon Vinaigrette, Balsamic Vinaigrette, or Creamy Garlic Hempseed Dressing.



8 cups mixed baby greens
1 large carrots peeled into ribbons
3 radishes thinly sliced
¼ small red onions very thinly sliced
¼ cups pumpkin seeds toasted


2 tablespoons red wine vinegar
1 teaspoons dijon mustard
1 teaspoons maple syrup
1 cloves garlic crushed
½ teaspoons kosher salt
¼ cups extra virgin olive oil
