These high-protein muffins make a great snack when on a restrictive diet. I like to cook butternut squash in my Instant Pot to have on hand for muffins or to serve as a simple side dish. Serve warm muffins with raw honey and coconut butter for a treat! 

Preparation Note

You'll need 1 cup of cooked and mashed butternut squash for this recipe. Butternut squash can be cooked in an Instant Pot or baked in the oven. Follow my directions here for more info!

1 cups cooked butternut squash
6 large eggs
4 tablespoons melted coconut oil
2 tablespoons raw honey
½ cups coconut flour
¾ teaspoons baking soda
¼ teaspoons sea salt
¾ teaspoons ground ginger
½ teaspoons ground allspice
