This hearty stew recipe is easy to make and comes together quickly—perfect for weeknight family dinners! I am using gluten-free orzo here but you can use regular wheat-based orzo if you are not on a gluten-free diet. Gluten-free orzo is made from corn flour and rice flour, and it can be found in the pasta section of your local grocery store. If you can't eat corn or can't find this type of gluten-free pasta, then you can substitute it with an equal amount (a heaping cup) of white jasmine rice that has been rinsed well in a fine mesh strainer under cool running water. Serve stew with a simple green salad for a nourishing family meal.
