Chicken cacciatore is a classic Italian dish that can be made with whatever vegetables you have on hand. It is typically made with either chicken or rabbit. The long simmering and acid from the tomatoes and wine produces extremely tender meat. It can be serve with cooked rice, polenta, or pasta. It is also delicious served with roasted cauliflower for a low-carb, grain-free option. 

Ingredients
3 tablespoons extra virgin olive oil
2½ pounds bone-in chicken thighs
1 medium onions chopped
6 cloves garlic crushed
8 ounces cremini mushrooms sliced
1 medium red bell peppers chopped
1 medium yellow bell peppers chopped
1 teaspoons sea salt
1 teaspoons dried oregano
1 teaspoons dried thyme
½ teaspoons dried rosemary crushed
1 pinches crushed red pepper flakes
1 cups dry red wine
½ cups kalamata olives
18 ounces diced tomatoes
2 tablespoons tomato paste
