Make this easy-to-prepare meal on a busy weeknight. Then, while it is baking, prepare a quick green salad or prep some green vegetables for steaming or braising. If you don't have fresh herbs on hand then replace them with dried. I use my Homemade Herbed Sea Salt (Herbamare) to season the chicken. This Herb Zipper quickly pulls fresh herb leaves from their stems...a very handy little kitchen gadget!

Easy One-Pan Oven Roasted Chicken with Potatoes and Carrots

Ingredients
2 pounds bone-in chicken breasts
2 pounds bone-in chicken legs
4 large carrots
4 large yukon gold potatoes
1 tablespoons chopped fresh rosemary
1 tablespoons chopped fresh thyme
1 teaspoons Herbamare (or sea salt)
freshly ground black pepper
4 tablespoons extra virgin olive oil
1 cups water (or chicken bone broth)
