These Mediterranean Chicken Wraps are naturally low in carbohydrates and grain-free because they use a collard wrap in place of the traditional tortilla. Make a batch of Blanched Collard Green Wraps to have ready to use throughout the week. You can use any type of leftover cooked chicken, or make a batch of Poached Chicken or Baked Chicken or Instant Pot Shredded Chicken to have on hand. 


Feta Dip

6 ounces feta cheese rinsed and crumbled
¼ cups whole milk greek yogurt
1 cloves garlic thinly sliced
½ teaspoons lemon zest
2 tablespoons chopped fresh dill
1 tablespoons extra virgin olive oil


8 large collard greens blanched
1½ cups cooked chicken
1 cups chopped roasted red bell peppers
½ small red onions very thinly sliced
1 medium English cucumbers cut into matchsticks
