I like to buy an extra bunch of bananas while grocery shopping just to make banana bread and banana muffins for my children, and then let them ripen on my counter until they are overripe. These muffins make a great after school snack or lunchbox treat for your children!

Ingredients

Dry Ingredients

2 cups brown rice flour
½ cups tapioca flour
2 teaspoons baking powder
½ teaspoons baking soda
½ teaspoons sea salt
1½ teaspoons cinnamon
¼ teaspoons ground nutmeg

Wet Ingredients

2 tablespoons finely ground chia seeds
cups warm water
2 large eggs
4 medium ripe bananas mashed (1 ½ cups)
cups melted coconut oil
cups maple syrup
2 teaspoons vanilla extract
