These zucchini muffins are a great way to use up some of that summer zucchini harvest! Feel free to include other additions such as dark chocolate chips, raisins, or cinnamon if your diet allows for these.


Dry Ingredients

2 cups brown rice flour
½ cups tapioca flour
2 teaspoons baking powder
½ teaspoons fine sea salt

Wet Ingredients

½ cups warm water
1 tablespoons whole psyllium husks
½ cups maple syrup
cups melted coconut oil
2 large eggs
2 cups grated zucchini
