This grain-free peach cobbler recipe is baked in a cast iron skillet. The heat that is held in the cast iron pan helps the cobbler to cook to perfection, preventing undercooked batter in the center. Pictured here is a mixture of white peaches and yellow peaches. Nectarines, blueberries, and blackberries also work!

6 medium peaches pitted and sliced
3 tablespoons maple syrup
2 tablespoons arrowroot powder
2 tablespoons butter
½ teaspoons ground nutmeg

Topping

1¼ cups blanched almond flour
½ cups arrowroot powder
2 teaspoons baking powder
½ teaspoons fine sea salt
2 large eggs
cups maple syrup
4 tablespoons butter melted
½ teaspoons almond extract
