Serve this easy-to-make pudding at the peak of cherry season when fresh cherries are in abundance. You can also use frozen cherries if fresh are not available. Serve the pudding to older babies or toddlers without the almond cream for a healthy treat.

Preparation Note

The cashews need to be pre-soaked for 4 to 6 hours before making this recipe.

Ingredients

Pudding

4 tablespoons kudzu
2 tablespoons water
1 cups organic apple juice
2 cups pitted cherries
3 tablespoons maple syrup

Almond Cream

1 cups raw cashews soaked
¼ cups raw honey
6 tablespoons water
1 teaspoons vanilla extract
½ teaspoons almond extract

Garnish

½ cups cherries (stems attached)
