Home-Fried Potatoes with Bacon and Shallots

When I was a child I was always excited to have baked potatoes for dinner because it usually meant I would get to have a version of this meal for breakfast! Serve this recipe with a Fried Egg and a green salad or some Sautéed Kale for a complete breakfast. 

Ingredients
6 slices organic bacon
2 medium shallots thinly sliced
3 medium baked russet potatoes cut into 1-inch cubes
½ teaspoons kosher salt
¼ teaspoons freshly ground black pepper
1 tablespoons minced fresh chives
1 tablespoons minced parsley
