This isn’t your grandmother’s fruitcake! I have to admit; I never liked fruitcake growing up. I remember being gifted it from neighbors and friends—it was overly sweet and full of artificially-dyed fruit. This healthy fruitcake recipe is slightly sweet and full of flavor from the brandy-soaked dried fruit, orange zest, and almond extract. The flavors are truly exquisite.

Ingredients

Dried Fruit and Nuts

¼ cups dried cranberries
¼ cups chopped dried apricots
¼ cups chopped raw hazelnuts
2 tablespoons brandy (I use local apple brandy)

Dry Ingredients

½ cups coconut flour
½ cups arrowroot powder
1½ teaspoons baking powder
¼ teaspoons sea salt

Wet Ingredients

2 large persimmons puréed
4 large eggs
cups maple syrup
cups melted coconut oil
2 teaspoons orange zest
½ teaspoons almond extract
