Spiced Tigernut Cookies (gluten-free, grain-free, nut-free)

8 pitted medjool dates (about ½ cup packed)
¼ cups coconut oil
1 large eggs
1 teaspoons vanilla extract
1 cups tigernut flour (packed)
1½ teaspoons cinnamon
½ teaspoons ground ginger
½ teaspoons baking soda
¼ teaspoons sea salt
