Grilled Thai Red Curry Chicken Salad

Preparation Note

The chicken breasts need to marinate on your counter for at least 30 minutes before grilling. Alternatively, you can marinate them in your refrigerator for up to 4 hours before grilling.



1 pounds boneless chicken breasts pounded
3 tablespoons lime juice
2 tablespoons brown rice vinegar
2 tablespoons Thai red curry paste
2 teaspoons fish sauce
2 tablespoons avocado oil


1 heads green leaf lettuce rinsed and torn
1½ cups thinly sliced red cabbage
1 medium cucumbers sliced
1 large red bell peppers sliced
2 green onions sliced
