1 large yukon gold potatoes
1 teaspoons extra virgin olive oil
¾ teaspoons sea salt divided
8 large eggs
2 cups chopped spinach
½ cups raw almond milk
½ cups crumbled feta cheese
5 green onions sliced
¼ cups chopped fresh dill
¼ cups chopped parsley
