Pulled pork is an excellent head start meal prep ingredient. It is delicious in tacos and can also be added to salads, soups, and wraps. If you are making it ahead of time you can skip broiling it until just before serving. These pulled pork tacos can be served with a variety of additional toppings including pickled red onions, sour cream, shredded cheese, lime wedges, or fresh salsa.


Pulled Pork

2 pounds boneless pork shoulder
2 teaspoons extra virgin olive oil
2 teaspoons ground cumin
2 teaspoons garlic powder
2 teaspoons onion powder
1½ teaspoons sea salt
1 teaspoons paprika
1 teaspoons dried oregano
1 teaspoons chipotle chili powder
½ teaspoons freshly ground black pepper
½ teaspoons ground coriander
½ cups chicken stock


1 heads butter lettuce (12 large leaves)
1 large avocados sliced
¼ cups cilantro
2 jalapeño peppers thinly sliced
