Serve these lovely muffins as an after-school snack to your children. Oats are high in beta-glucans, which serve as a substrate for Bifidobacteria and Lactobacilli bacteria in the gut. These bacteria then produce short-chain fatty acids which nourish the cells lining the gut. Look for organic rolled oats to minimize pesticide exposure. If you are gluten-free, then choose organic rolled oats that are also certified gluten-free.

Ingredients

Dry Ingredients

2 cups oat flour
1 cups rolled oats
2 teaspoons baking powder
¼ teaspoons baking soda
¼ teaspoons fine sea salt
1½ teaspoons cinnamon
½ teaspoons ground allspice

Wet Ingredients

½ cups warm water
2 tablespoons finely ground golden flaxseeds
2 cups mashed bananas (about 3 large ripe bananas)
cups coconut sugar
cups avocado oil (or melted coconut oil)
2 teaspoons raw apple cider vinegar

Other Ingredients

½ cups fresh or frozen blueberries
